So, my husband works a graveyard shift in a hotel in a rather small town.  This leaves him with entirely too much time on his hands some nights.  So, two or three times a week, when I get up in the morning, I have a notification that he's sent me pins... because he's a Pinteerst addict.  Sometimes, this works out amazingly well because I get cute animals and some really good recipes.  On this occasion, what I got was a recipe for Key Lime Bundt Cake.

Yum.

Now, I love anything and everything lime.  But Key Lime?  That is my true addiction.  So, the love was shared because I had to make this.  Had.  To.  And now, you're being forced to look at pictures because peppermint_wow insisted that I post if I did indeed make the cake.  So, blame her.  Or my husband.  Just not me 'cause it's not my fault I'm weak and stuff.

I know, it's not very pretty, but it sure was damn good.  Also, I've been seeing that Key Lime frosting everywhere... right up until I actually needed it.  So, I opted for a plain cream cheese frosting (vanilla would also work, but I'm partial to cream cheese).  Initially, I had thought to put lime juice into the frosting but my 15-year-old said she thought the plain would be better, so we went with that.

This recipe was easy enough, and called for pretty basic ingredients (flour, sugar, butter, baking soda and powder, etc.).  Even if you're not an experienced baker, I think you could pull this one off.  The only caution is that you GREASE and FLOUR your bundt pan VERY well.  And I mean make it look like the pan's got a coke habit coated.  Or your cake will stick (even in a supposedly nonstick pan, trust me).  Also, I didn't pay close enough attention to the recipe when I was making my grocery list (I'm such an idiot sometimes) and didn't notice the recipe called for one CUP of lime yogurt (and I thought it said one container LOL).  So, I made up the difference with some plain, nonfat Greek yogurt (and I used Chobani Key Lime Greek yogurt as well).  Don't think it made any difference.

On an amusing side note, we're in the last week of school this week.  Today is the girls' last full day with Tuesday, Wednesday, and Thursday being finals.  Over the course of the last month or so, my younger child (she's 13) has been getting slower and slower in the mornings.  So much so that on Friday, she didn't even get downstairs until 6:30 (she has to be at the bus stop by 6:35).  Needless to say, I took her to school on Friday.  When she again barely made it downstairs this morning, she was frantically digging for breakfast when I said, "You want some cake?"  she respsonds with, "I can have CAKE?"  Sure.  Why the hell not, right?  Worst.  Parent.  Ever.  Hahaha... But I'd rather she ate a piece of cake than nothing, you know?

Stop judging me and go back to drooling.  :D
