First, the weirdness.  A couple weeks ago, my bosses moved into the 21st century and bought iPhones for our foremen – and for me.  Not that it matters for me because I never leave the office, but it’s nicer than giving fifteen men my personal cell.  In the two weeks that I’ve had this phone, I’ve gotten nine Facetime calls from some random Chicago-based number.

But wait, I promised you dessert, too, didn’t I?  You’re right, I did.  And funny story here.  My 14-year-old texted me the other day telling me she was bored.  I jokingly told her that I had a pie she could make.  When I came home that night, there was a pie in the fridge.

So, I found this Cream Cheese Lemonade Pie on Pinterest last weekend and, since we’re well into our triple-digit summer already, I thought it’d be the perfect dessert.  Turns out, it really is.  Light, fluffy, and refreshing.  Also, simple to make.

So, my parents were born and raised in a little town in Illinois and, although my palate has progressed past the meat and potato (both usually fried) staples we had growing up, sometimes I fall firmly back into those culinary wormholes my mother opened in my soul. It doesn't help that my husband's family is from Indiana and shares similar pitfalls in their diet, but I digress.

So, I don't normally do this, but a friend asked for this recipe and since I had to type it anyway, I thought I'd share.  My husband was diagnosed with Type 2 Diabetes in 2002 and since then, I've been trying to find ways to feed his pasta cravings without going overboard.  To further complicate issues, several months ago, my then-14-year-old daughter (now 15!) decided to go vegetarian.  So, my meal plan making is such an adventure these days.  Anyway, my husband found this fabulous cookbook called The With or Without Meat Cookbook.  So, every recipe starts vegetarian and gives you the option to add meat if you want.  Perfect!  But wait, it gets better.  It's actually a diabetic cookbook.  SCORE!
